APRIL MEAL PLAN
Fresh meals to cook and eat on repeat this month!
Wanting to add a little simplicity to life this spring, without skimping on the good stuff, so trying a plug and play meal plan for April that gives options but is also repetitive, requiring less work and decision making, and also makes grocery shopping easier. Take a peek at the recipes below: 7 dinner (plus suggestions for leftovers), 4 lunch, 4 breakfast, and 3 treat options. Rinse and repeat all month!
A couple quick suggestions before you dive in: 1. remember to ask or assign dish duty to the kids this month, and 2. paste recipe links into chatgpt (or other ai) and ask it to make you a grocery list!

DINNER:
ONE | Loaded Baked Potatoes with Steak
Buttered Noodles & Roasted Broccoli with leftover Steak
TWO | Chicken Noodle Soup
Double recipe for leftovers - serve with Toast or Grilled Cheese
THREE | Slow Cooker Carnitas Tacos
Make Pulled Pork Sandwiches or Bowl with leftovers
FOUR | Mediterranean Beef Bowls
FIVE | Grilled Chicken (or this recipe), Quinoa Salad, & Fries
SIX | Sausage Pasta in Creamy Tomato Sauce (so flavorful! I usually use a penne or bigger pasta noodle, sub wine with chicken stock, and skip the kale, lol)
SEVEN | Pesto Chicken Wraps, Crudités, & Chips/Fries (great for picnic or dinner on the go)
LUNCH:
ONE | Baked Chicken Meatballs - serve with a salad or snack plate
TWO | Turkey Sandwiches on Bakery Bread (Ciabatta, Baguette, etc.)
THREE | Quesadilla Plate (guacamole, salsa, sour cream, leftover dinner meat)
FOUR | Leftovers or *Snack Plate (cracker recipe to try)
BREAKFAST:
ONE | Breakfast Sandwiches (make extra to freeze)
TWO | Spaghetti Pancakes (or just pancakes ;)
THREE | Yogurt & Granola
FOUR | Leftovers Bowl & Fried Eggs (or Breakfast Snack Plate)
TREATS:
TWO | Baked Apple À La Mode
