THE MOST PERFECT, MOST SIMPLE, & MOST DELICIOUS SIDE SALAD
Takes less than 5 minutes to throw together and requires zero chopping or dicing (PTL)!
Here’s the salad I make anytime we need a veggie side but I want to keep things effortless in the kitchen. Also makes a good base for breakfast (with avocado and eggs) or lunch (with chicken salad or leftover meat)!
(Served with roasted potato rounds and Teton beef sausage from costco — easiest dinner ever)
SIMPLE AND DELICIOUS, 5 MINUTE SIDE SALAD
The Fixings:
5 oz container Spring mix (or other leafy greens)
Shaved/shredded parmesan cheese, to taste
Pumpkin seeds (or pine nuts), to taste
The Dressing (more of a feel than an actual recipe so be sure to taste as you go):
1/4 cup olive oil (or more to taste)
Juice from 1/2 lemon (sometimes I add more - good citrus squeezer)
Salt & pepper, to taste
